Prepare the Shrimp Mixture
In a bowl, combine the peeled and deveined shrimp, chopped fennel, diced tomato, and finely chopped shallot. Add 1 tablespoon of olive oil, zhoug, salt, and black pepper. Mix well and set aside.

Toast the Bread
Heat a skillet over medium heat and add 1 tablespoon of olive oil. Toast each slice of sourdough bread until golden brown on both sides. Remove and place on a baking sheet.

Top with Shrimp Mixture
Spread the shrimp mixture evenly over each slice of toasted sourdough bread.

Add Parmesan
Sprinkle grated Parmesan cheese generously over the shrimp-topped bread.

Bake
Preheat the oven to 200°C (400°F). Bake the toast in the oven for about 10-12 minutes, or until the shrimp are cooked through and the cheese is melted and bubbly.
