Tart Crust

Method

Tart Preparation

  1. 1

    Make the Tart Crust

In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add the egg yolk and ice water, mixing until just combined. Form the dough into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

  2. 2

    Roll Out the Dough

Preheat your oven to 375°F (190°C). On a floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the pan, ensuring it is even along the edges. Prick the bottom with a fork.

  3. 3

    Blind Bake the Crust

Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment. Bake for another 10 minutes or until golden brown. Allow to cool completely.

  4. 4

    Prepare the Filling

In a mixing bowl, whip together 1 cup of heavy cream with 2 tablespoons of powdered sugar and 1 teaspoon of vanilla extract until soft peaks form. Spread this mixture evenly over the cooled tart crust.

  5. 5

    Add Seasonal Fruits

Arrange your choice of seasonal fruits such as strawberries, blueberries, kiwi, and peaches artistically over the whipped cream layer.

  6. 6

    Glaze (optional)

For a glossy finish, heat 1/4 cup of apricot jam with 1 tablespoon of water until melted. Brush over the fruit. Chill the tart for at least 1 hour before serving.
