    Prepare the Shiro-Miso Butter

    In a medium bowl, combine the softened unsalted butter, shiro miso, minced garlic, and chopped chives. Mix until all ingredients are well incorporated. Shape the mixture into a log and wrap in parchment paper. Refrigerate until firm.

    Season the Steak

    Take the flat iron steaks out of the refrigerator and let them come to room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

    Sear the Steak

    Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a cutting board for about 5 minutes.

    Serve

    Slice the steak against the grain and top each serving with a slice of the shiro-miso butter. Serve immediately.
