    Prepare the Potatoes

    Begin by boiling the rosemary potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

    Smash and Season Potatoes

    Once cool enough to handle, smash the potatoes gently with a fork or the palm of your hand. Drizzle with olive oil, sprinkle with salt, black pepper, and chopped fresh rosemary.

    Cook the Mushrooms

    In a skillet, heat a tablespoon of olive oil over medium heat. Add sliced mushrooms and sauté until golden brown, about 5-7 minutes. Season with salt and pepper, then set aside.

    Infuse the Garlic Butter

    In the same skillet, melt the butter over low heat. Add minced garlic and cook gently until fragrant, about 2 minutes. Remove from heat and set aside.
