    Prepare the Puttanesca Sauce

    In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Add the canned diced tomatoes, capers, black olives, and red pepper flakes to the saucepan. Stir to combine and let simmer for 10-15 minutes until the sauce thickens slightly. Stir in the chopped parsley at the end.

    Prepare the Salmon

    While the sauce is simmering, season the salmon fillets with salt and black pepper on both sides.

    Pan-Roast the Salmon

    In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Once hot, add the salmon fillets, skin-side down. Cook for about 4-5 minutes until the skin is crispy, then carefully flip and cook for another 3-4 minutes until the salmon is cooked through.

    Serve

    Plate the salmon fillets and spoon the puttanesca sauce generously over the top. Garnish with additional parsley if desired.
