    Prepare the Vegetables

    Slice the yellow squash, zucchini, potatoes, and eggplant into bite-sized pieces. Toss them with 2 tablespoons of olive oil, salt, and black pepper.

    Roast the Vegetables

    Preheat your oven to 400°F (200°C). Spread the vegetables on a baking sheet and roast for about 20-25 minutes, or until they are tender and slightly caramelized.

    Cook the Salmon

    While the vegetables are roasting, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the Verlasso salmon fillets with salt and black pepper. Once the oil is hot, add the salmon, skin-side down, and cook for about 4-5 minutes until the skin is crispy.

    Finish Cooking the Salmon

    Carefully flip the salmon fillets and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Serve

    On each plate, place a portion of roasted vegetables, top with a salmon fillet, and spoon over some puttanesca sauce. Garnish with fresh basil.
