Preparation of Octopus

    Cook the Octopus

    In a large pot, bring salted water to a boil. Add the whole octopus and simmer for about 45 minutes to 1 hour. Once tender, remove and let cool.

    Prepare the Marinade

    In a bowl, mix olive oil, juice from 1 lemon, minced garlic, and chili oil. Add salt to taste.

    Marinate the Octopus

    Once the octopus has cooled, cut it into manageable pieces and marinate in the olive oil mixture for at least 30 minutes.

Grilling and Serving

    Preheat the Grill

    Preheat your grill to high heat. Cut the remaining lemon in half.

    Grill the Octopus

    Grill the marinated octopus pieces for about 3-4 minutes on each side until charred.

    Char the Lemon

    Grill the lemon halves cut side down until charred.

    Prepare Skordalia

    While the octopus is grilling, boil the potatoes until tender. Mash and mix with garlic, olive oil, lemon juice, and salt to create skordalia.

    Serve the grilled octopus with skordalia, charred lemon, and a sprinkle of kalamata olives.
