    Prepare the Potatoes

    Peel and chop the russet potatoes into chunks. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.

    Cook the Potatoes

    Once boiling, reduce heat and simmer for about 15-20 minutes or until the potatoes are easy to pierce with a fork. Drain the potatoes and return them to the pot.

    Mash the Potatoes

    Add the butter, sour cream, chives, egg yolk, salt, and black pepper to the drained potatoes. Mash until smooth and creamy.

    Pipe the Potatoes

    Preheat your oven to 400°F (200°C). Transfer the mashed potato mixture to a piping bag fitted with a large star nozzle or use a spoon to form mounds on a baking sheet lined with parchment paper.

    Bake

    Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown.

    Serve

    Remove from the oven and serve warm as a delicious side dish.
