    Prepare the Butternut Squash

    Preheat the oven to 350°F (175°C). Peel and seed the butternut squash, then cut it into 1-inch cubes.

    Confit the Squash

    In a large baking dish, combine the cubed butternut squash, olive oil, thyme, garlic cloves, salt, and black pepper. Ensure the squash is well coated in oil.

    Bake

    Cover the dish with aluminum foil and bake in the preheated oven for about 45 minutes or until the squash is tender.

    Add Goat Cheese and Almonds

    Remove the foil, sprinkle goat cheese and slivered almonds over the squash, and return to the oven for an additional 10-15 minutes until the cheese is warm and slightly melted.

    Serve

    Remove from the oven, allow to cool slightly, and serve warm as a side dish or appetizer.
