Make the Croutons
Preheat the oven to 375°F (190°C). In a bowl, toss the brioche cubes with olive oil, minced garlic, salt, and pepper. Spread them out on a baking sheet and bake for 10-15 minutes or until golden and crisp.

Char the Grapes
In a skillet over medium heat, add the halved grapes and cook for about 5 minutes until they start to char and soften. Remove from heat and let cool.

Assemble the Salad
In a large bowl, combine the chopped romaine lettuce, charred grapes, white anchovies, and shaved parmesan. Add the croutons and drizzle with Caesar dressing. Toss gently to combine.

Serve immediately, garnished with additional shaved parmesan and freshly cracked pepper if desired.
