Method
Making the Cherry Clafoutis

Prepare the Oven and Pan
Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish or similar baking dish.

Mix the Batter
In a mixing bowl, whisk together the eggs, sugar, flour, milk, vanilla extract, and salt until smooth.

Add Cherries
Pour half of the batter into the prepared dish. Evenly distribute the fresh cherries over the batter, then pour the remaining batter on top.

Bake
Bake in the preheated oven for 35-40 minutes, or until the clafoutis is puffed and golden brown.

Cool
Remove from the oven and let it cool for a few minutes before serving.
Making the Cherry Compote

Combine Ingredients
In a small saucepan, combine the cherries, sugar, and lemon juice.

Cook over medium heat for about 10 minutes, until the cherries have softened and the mixture has thickened slightly. Remove from heat and let cool.

Slice the cherry clafoutis and serve warm, topped with a scoop of mascarpone ice cream, a spoonful of cherry compote, and a sprinkle of toasted almonds.
