Biscuit Preparation

    Make the Biscuits

    Preheat the oven to 425°F (220°C). In a bowl, mix flour, baking powder, baking soda, and salt. Cut in the cold butter until crumbly. Stir in buttermilk until just combined. Turn onto a floured surface, knead gently, and roll out to 1-inch thickness. Cut into rounds and place on a baking sheet. Bake for 15-20 minutes until golden.

    Make the Gravy

    In a skillet over medium heat, cook the ground sausage until browned. Sprinkle in the flour and stir to combine, cooking for 1-2 minutes. Gradually add milk, whisking constantly until the gravy thickens. Season with black pepper and salt to taste.

    Cook the Eggs

    In a separate skillet, heat a little oil over medium-low heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

    Assemble the Dish

    Split the biscuits in half, ladle the gravy over the biscuits, top with a sunny-side up egg, and garnish with scallions and Aleppo pepper.
