Method

Cooking the Bacon

    Cook the bacon

    In a large skillet, heat the olive oil over medium heat. Add the bacon slices and cook until crispy, about 5-7 minutes. Flip halfway through cooking for even crispiness.

    Once cooked, remove the bacon from the skillet and place it on a paper towel to drain excess grease. Reserve some bacon grease in the skillet for cooking the eggs.

Scrambling the Eggs

    Beat the eggs

    In a bowl, crack the 4 eggs and whisk them together. Add salt and black pepper to taste.

    In the same skillet with reserved bacon grease, pour in the beaten eggs. Cook over medium heat, stirring gently until the eggs are just set, about 3-4 minutes.

Assembling the Burrito

    While the eggs are cooking, slice the avocado in half, remove the pit, and scoop out the flesh. Mash it lightly with a fork and set aside.
