Grits Preparation

    Cook the Grits

    In a large pot, bring 4 cups of water and 1 tsp of salt to a boil. Gradually whisk in the stone-ground grits. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until the grits are thick and creamy.

    Add Cream and Cheese

    Once the grits are cooked, stir in the heavy cream, butter, and shredded cheddar cheese until smooth and creamy. Keep warm while you prepare the shrimp.

Shrimp & Sauce Preparation

    Sauté the Shrimp

    In a large skillet, heat 2 tbs of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then add the shrimp and sprinkle with Cajun seasoning. Cook for 2-3 minutes on each side until shrimp are pink and opaque.

    Make the Sauce

    Add diced tomatoes and chicken broth to the skillet with the shrimp. Bring to a simmer and cook for an additional 5 minutes. Stir in lemon juice, and season with salt and pepper to taste.

    Finish with Green Onions

    Remove the skillet from heat and stir in the sliced green onions. Let the sauce sit for a minute to meld the flavors.

Serving

    Serve the Dish

    Spoon the creamy grits onto plates and top with the spicy shrimp and sauce. Garnish with extra green onions if desired.
