Prepare the Biscuit Dough
In a large bowl, combine the all-purpose flour, baking powder, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.

Shape and Bake the Biscuits
Preheat your oven to 425°F (220°C). Turn the dough onto a floured surface and knead gently. Pat the dough to about 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden brown.

Marinate the Chicken
In a bowl, soak the boneless chicken thighs in buttermilk for at least 1 hour or overnight in the refrigerator to tenderize.

Fry the Chicken
Heat the vegetable oil in a deep skillet over medium-high heat. Remove chicken from buttermilk, allowing excess to drip off, then coat in the flour mixture. Fry the chicken in hot oil for 5-7 minutes on each side until golden and cooked through. Drain on paper towels.

In a small bowl, combine mayonnaise, hot sauce, honey, and garlic powder. Mix well until smooth and creamy.

Assemble the Sandwich
Slice the baked biscuit in half. Spread a generous amount of sassy sauce on the bottom half, add a piece of fried chicken, top with pickles, and cover with the biscuit top. Serve immediately.
