Marinate the Chicken
In a large bowl, combine the buttermilk, salt, paprika, garlic powder, onion powder, and black pepper. Add the chicken pieces and ensure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for the best flavor.

Prepare the Breading
In another bowl, mix together the all-purpose flour, salt, paprika, garlic powder, onion powder, and black pepper. Set aside.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the cooking oil to 350°F (175°C).

Bread the Chicken
Remove the chicken pieces from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring they are fully coated. Shake off excess flour.

Fry the Chicken
Carefully place the breaded chicken pieces in the hot oil, working in batches to avoid overcrowding. Fry for about 10-15 minutes, turning occasionally, until the chicken is golden brown and cooked through. Use a meat thermometer to check that the internal temperature reaches 165°F (74°C).

Drain and Serve
Once cooked, remove the chicken from the oil and place on a wire rack or paper towel-lined plate to drain excess oil. Serve hot.

Mash the Potatoes
Add the butter, milk, salt, and black pepper to the potatoes. Use a potato masher or hand mixer to mash until creamy and smooth. Adjust seasoning to taste.

Spoon the mashed potatoes onto plates and serve alongside the crispy fried chicken.
