Method
Chicken Marinade
- 1
Prepare the Marinade
In a large bowl, combine buttermilk, hot sauce, salt, and black pepper. Whisk until well combined.
- 2
Marinate the Chicken
Add the chicken pieces to the buttermilk mixture, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, or overnight for best results.
Breading
- 3
Mix the Breading Ingredients
In a separate bowl, combine all-purpose flour, paprika, garlic powder, onion powder, cayenne pepper, black pepper, and salt. Mix well.
- 4
Bread the Chicken
Remove the marinated chicken from the refrigerator. Dredge each piece in the flour mixture, shaking off any excess. Set aside on a wire rack.
Frying
- 5
Heat the Oil
In a large, heavy-bottomed pot or deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 6
Fry the Chicken
Carefully add the breaded chicken pieces to the hot oil, avoiding overcrowding. Fry in batches for about 12-15 minutes, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
- 7
Drain the Chicken
Once cooked, remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil.
