Prepare the Fried Chicken

In a large bowl, combine the buttermilk and chicken thighs. Cover and refrigerate for at least 1 hour or overnight for best results.

In a separate bowl, mix together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Coat the Chicken
Remove the chicken from the buttermilk and allow excess to drip off. Dredge each piece in the flour mixture, ensuring it is well-coated. Set aside.

Fry the Chicken
In a large skillet, heat the canola oil over medium-high heat. Once hot, carefully add the coated chicken pieces and fry for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
