Start by washing, peeling, and slicing the fresh peaches. Place them in a large mixing bowl.

Add the granulated sugar, lemon juice, ground cinnamon, and cornstarch to the peaches. Toss gently to combine and coat the peaches evenly. Let the mixture sit for about 15 minutes to allow the flavors to meld.
