Method

Prepare the Biscuit Dough

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Mix well to ensure even distribution of the leavening agents.

  2. 2

    Cut in Butter

Add the unsalted butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

  3. 3

    Add Wet Ingredients

In a separate bowl, whisk together the buttermilk and egg. Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.

  4. 4

    Chill Dough

Cover the dough with plastic wrap and refrigerate for about 30 minutes.

Prepare the Filling

  1. 5

    Cook the Beef

In a skillet over medium heat, add the ground beef. Season with salt and black pepper. Cook until browned, breaking it up with a spatula, about 5-7 minutes.

  2. 6

    Add Cheese and Mustard

Once the beef is cooked, reduce heat to low. Add the cheddar cheese and Dijon mustard. Stir until the cheese is melted and fully combined with the beef.

  3. 7

    Prepare Pickles

Chop the pickles into small pieces and set aside.

Assemble the Sliders

  1. 8

    Preheat Oven

Preheat your oven to 400°F (200°C).

  2. 9

    Shape the Biscuit Dough

On a floured surface, roll out the chilled biscuit dough to about ½ inch thickness. Cut out small rounds using a biscuit cutter or a glass.

  3. 10

    Bake the Biscuit Tops

Place half the biscuit rounds on a lined baking sheet. Spoon a portion of the beef filling onto each round, then top with another biscuit round. Bake in the preheated oven for 15-20 minutes, or until golden brown.

  4. 11

    Prepare Garlic Butter

In a small saucepan, melt the butter over low heat. Stir in garlic powder and chopped parsley.

  5. 12

    Brush Sliders

Once the sliders are out of the oven, brush the tops with the garlic butter mixture for added flavor.

  6. 13

    Serve

Serve the Cristo sliders warm with extra pickles on the side if desired.
