Preparing the Cider

    Combine Base Ingredients

    In a large pot, combine the apple juice, brown sugar, cinnamon sticks, cloves, nutmeg, and vanilla extract. Stir well to combine all the ingredients.

    Place the pot over medium heat and bring the mixture to a gentle simmer. Allow it to simmer for about 20 minutes, stirring occasionally, to let the flavors meld together.

    Remove Spices

    After simmering, remove the pot from heat and discard the cinnamon sticks and cloves. The cider should be warm and fragrant.

Making the Caramel

    Melt Sugar

    In a medium saucepan over medium heat, add the granulated sugar. Stir constantly until the sugar melts and turns a golden amber color.

    Once the sugar is melted, carefully add the unsalted butter. The mixture will bubble vigorously, so be cautious. Stir until the butter is completely melted.

    Gradually add the heavy cream to the butter and sugar mixture, stirring constantly until smooth. Allow the caramel to simmer for an additional 2-3 minutes.

Combining Cider and Caramel

    Pour the warm caramel sauce into the prepared apple cider, stirring well to combine. Adjust sweetness by adding more caramel if desired.

    Ladle the caramel apple cider into mugs and serve warm. Optionally, garnish with a cinnamon stick or a slice of apple for presentation.
