Method
Fritters Preparation
- 1
Mix the Ingredients
In a large mixing bowl, combine the shredded chicken, cooked rice, and 1 cup of Tikka Masala sauce. Mix well until all ingredients are evenly distributed.
- 2
Prepare the Batter
In another bowl, whisk together the all-purpose flour, salt, black pepper, cumin powder, and coriander powder. In a separate bowl, beat the egg and then add it to the flour mixture. Mix until a smooth batter forms.
- 3
Form the Fritters
Add the chicken and rice mixture to the batter and mix until combined. If the mixture is too wet, add a little more flour until it holds together. Shape the mixture into small fritters, about the size of a golf ball.
- 4
Coat with Breadcrumbs
Roll each fritter in breadcrumbs until they are fully coated.
Cooking the Fritters
- 5
Heat the Oil
In a large frying pan, heat the cooking oil over medium-high heat until hot but not smoking.
- 6
Fry the Fritters
Carefully add the fritters to the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy.
- 7
Drain and Cool
Once cooked, remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
Serving
- 8
Serve with Sauce
Serve the fritters hot with the remaining Tikka Masala sauce on the side for dipping.
