Meat Filling Preparation

    Cook the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until the vegetables are tender.

    Add Meat and Seasoning

    Add the ground lamb and ground beef to the skillet. Cook until browned, breaking it apart with a spatula. Stir in minced garlic, salt, black pepper, thyme, and rosemary. Cook for another 2 minutes.

    Incorporate Broth and Sauce

    Pour in the beef broth and Worcestershire sauce. Bring the mixture to a simmer and let it cook for about 10-15 minutes until slightly thickened. Remove from heat.

Mashed Potatoes Preparation

    Boil the Potatoes

    In a large pot, bring salted water to a boil. Add the peeled and cubed potatoes and cook until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy. Set aside.

    Make the Roux

    In a small saucepan, melt 2 tablespoons of butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden.

    Add Broth and Thicken

    Slowly whisk in 1 cup of beef broth, cooking until the mixture thickens. Add salt and black pepper to taste.

Assembly and Baking

    Assemble the Pie

    Preheat your oven to 400°F (200°C). In a baking dish, layer the meat filling evenly at the bottom. Spread the mashed potatoes over the top, smoothing it out with a spatula.

    Bake the Shepherd’s Pie

    Place the assembled baking dish in the preheated oven. Bake for about 25-30 minutes until the top is golden brown. If desired, broil for an additional 2-3 minutes for extra browning.

    Remove from the oven and let it cool for a few minutes before serving. Drizzle with the prepared gravy before enjoying.
