Season the Beef
In a bowl, mix together salt, ground black pepper, garlic powder, and onion powder. Rub the seasoning mixture all over the roast beef.

Roast the Beef
Transfer the seared roast beef to a preheated oven at 350°F (175°C). Roast for about 20-25 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.

Let it Rest
Remove the roast from the oven and let it rest for 10 minutes before slicing thinly.
Creamy Horseradish Sauce Preparation

Mix the Sauce
In a small bowl, combine the horseradish sauce, mayonnaise, sour cream, and lemon juice. Mix well until smooth.

Season the Sauce
Add salt and ground black pepper to taste, adjusting as necessary.

Prepare the Buns
Slice the brioche buns in half and lightly toast them if desired.

Assemble the Sandwiches
Layer the sliced roast beef on the bottom half of each brioche bun, top with a slice of white cheddar cheese, and drizzle with the creamy horseradish sauce. Place the top half of the bun on to complete the sandwich.
