    Place 1 cup of quinoa in a fine-mesh sieve and rinse under cold running water for about 1-2 minutes to remove the saponins, which can impart a bitter flavor.

    Dice the red bell pepper, zucchini, and carrot into small, even pieces. Rinse the spinach leaves under cold water and set aside.

    In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.
