    Sear the Roast

    In a large pot, heat olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Sear the roast on all sides until browned, about 4-5 minutes per side.

    Add Aromatics

    Add the chopped onion and garlic to the pot, sautéing until the onion is translucent, about 3-4 minutes.

    Slow Cook the Roast

    Pour in the beef broth and add thyme. Bring to a simmer, cover, and reduce heat to low. Cook for 3-4 hours until the beef is tender and easily shredded.

    Shred the Beef

    Once cooked, remove the roast from the pot and let it rest for a few minutes before shredding it using two forks. Set aside the drippings for gravy.

Gravy

    Make the Gravy

    In a saucepan, heat the beef drippings over medium heat. Whisk in the flour and cook for 1 minute until golden. Gradually add water, whisking constantly to avoid lumps. Simmer until thickened, about 5 minutes. Season with salt and black pepper to taste.

Fries

    Cook the Fries

    Prepare the frozen French fries according to package instructions, either baking or frying until golden and crispy.

Assembly

    Assemble the Poutine

    On a plate, layer the crispy fries, top with the shredded beef pot roast, pour over the gravy, and finish with white cheddar cheese curds. Serve immediately.
