Method

Prepare Potato Cakes

    Cook and Mash Potatoes

    Peel and chop the russet potatoes into chunks. Boil in a large pot of salted water until tender, about 15-20 minutes. Drain and mash until smooth.

    In a bowl, combine the mashed potatoes, flour, egg, salt, black pepper, and grated cheese. Mix thoroughly until well combined.

    Form and Cook Cakes

    Shape the mixture into patties. Heat olive oil in a skillet over medium heat. Cook potato cakes for 4-5 minutes on each side until golden brown. Keep warm.

Poach Eggs

    Prepare Water

    In a large saucepan, bring water to a gentle simmer. Add vinegar.

    Crack each egg into a small bowl, then gently slide into the simmering water. Cook for about 3-4 minutes, or until whites are set but yolks are still runny. Remove with a slotted spoon and drain on a paper towel.

Make Hollandaise Sauce
