    Begin by rinsing the Paddy rice under cold water in a fine mesh sieve until the water runs clear. This helps remove excess starch.

    Chop Vegetables

    While the rice is rinsing, dice the onion, carrots, and bell pepper into small, uniform pieces. Mince the garlic cloves.

Cooking

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced onion. Sauté for 2-3 minutes until the onion becomes translucent.

    Add Vegetables

    Add the diced carrots and bell pepper to the pot. Cook for another 3-4 minutes, stirring occasionally until softened.

    Cook the Rice

    Stir in the rinsed Paddy rice, followed by the vegetable broth, salt, and black pepper. Bring the mixture to a boil.

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 minutes or until the rice is tender and the broth is absorbed.
