Preparing the Onion Rings

Slice the Onions
Peel the onions and slice them into thick rings, about 1/2 inch wide. Carefully separate the rings and set aside.

Prepare the Batter
In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and chili powder. Gradually whisk in the cold sparkling water until you achieve a smooth batter.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 375°F (190°C).

Coat the Onion Rings
Dip each onion ring into the batter, allowing excess batter to drip off.

Fry the Onion Rings
Carefully place the battered onion rings into the hot oil in batches. Fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Making the Ranch Dressing

Combine Ingredients
In a medium bowl, combine the mayonnaise, sour cream, buttermilk, dried dill weed, garlic powder, onion powder, salt, and black pepper.

Mix Well
Mix all the ingredients together until smooth and creamy. Adjust seasoning to taste.

Cover the ranch dressing and refrigerate for at least 30 minutes before serving to let the flavors meld.
