Cook the Chicken
In a pot, add the chicken breast with enough water to cover. Bring to a boil, reduce heat, and simmer for 15-20 minutes until cooked through. Remove from water, let cool, and shred.

Prepare the Filling
In a large bowl, combine the shredded chicken, finely chopped cabbage, cashews, chopped cilantro, and red chili. Add minced garlic, grated ginger, soy sauce, salt, and black pepper to the mixture. Mix well to combine all ingredients.

Assemble the Spring Rolls
Take a spring roll wrapper and place it on a flat surface. Add 2-3 tablespoons of the filling mixture to the center of the wrapper. Fold the bottom edge over the filling, then fold in the sides, and roll tightly to seal. Repeat with the remaining wrappers and filling.

Fry the Spring Rolls
In a large frying pan or wok, heat oil over medium heat. Once hot, carefully add the spring rolls in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
