Fish Preparation

Prepare the Fish
Start by seasoning the pollock fillets with salt, black pepper, and paprika.

Set Up Breading Station
In three separate shallow dishes, place flour in the first, beaten eggs in the second, and panko breadcrumbs in the third.

Bread the Fish
Dredge each seasoned fish fillet in flour, dip into the beaten eggs, and finally coat with panko breadcrumbs.

Fry the Fish
In a large skillet, heat vegetable oil over medium heat. Once hot, add the breaded pollock fillets and cook for 3-4 minutes on each side or until golden brown and cooked through.

Toast the Bread
While the fish is frying, toast the brioche slices until golden brown.

Slice the Tomato and Onion
While the bread is toasting, slice the tomato and red onion into thin rings.

Assemble the Sandwich
On each toasted brioche slice, place a lettuce leaf, a fried pollock fillet, a slice of cheddar cheese, a few tomato slices, and red onion rings. Top with another slice of brioche.
