Prepare the Potatoes

Sauté the Vegetables
Chop the onion and bell pepper. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and bell pepper, and sauté for about 5 minutes until softened.
Cook the Hash

Crisp the Hash
Increase the heat to medium-high and cook for about 10-15 minutes, stirring occasionally until the hash is crispy and golden brown.
Cook the Eggs and Toast

Fry the Eggs
In a separate pan, add the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and fry them to your preferred doneness (sunny-side up, over-easy, etc.). Season with salt and pepper to taste.

Plate the Dish
Serve the corned beef hash hot, topped with the fried eggs, alongside the toast.
