Slice the Potatoes
Wash and peel the potatoes. Slice them thinly (about 1/8 inch thick) using a mandolin or sharp knife.

Soak the Slices
Place the potato slices in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Dry the Slices
Drain the potato slices and pat them dry with a clean kitchen towel or paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add a handful of potato slices to the hot oil, being careful not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown.

Drain and Season
Remove the chips with a slotted spoon and drain on paper towels. While still hot, sprinkle with salt, paprika, garlic powder, onion powder, and cayenne pepper to taste.

Cool and Serve
Allow the chips to cool completely before serving. Enjoy your homemade Zapp's-style chips!
