Prepare Beef

Cook the Chuck Roast

Season the chuck roast with salt and pepper. In a large pot or Dutch oven, sear the roast on all sides over medium-high heat. Remove the roast and set aside.

Add Aromatics

In the same pot, add sliced onions and minced garlic. Sauté until softened, about 5 minutes.

Simmer

Return the roast to the pot, add beef broth, thyme, bay leaves, and any additional seasoning. Bring to a boil, then reduce heat to low and cover. Cook for 3-4 hours, or until the meat is fork-tender.

Shred the Beef

Remove the roast from the pot and shred the beef with two forks. Return the shredded beef to the pot, stir to combine with the juices, and keep warm.

Make Rougaroux Dressing

Combine Ingredients

In a bowl, mix together mayonnaise, hot sauce, garlic powder, lemon juice, and chopped parsley. Adjust seasoning to taste.

Assemble Po'boys

Prepare Bread

Slice the Leidenheimer bread lengthwise without cutting all the way through.

Build the Sandwich

Layer shredded beef debris generously onto the bread. Top with Rougaroux dressing, sliced pickles, and lettuce.

Serve

Close the sandwich and serve immediately. Enjoy your traditional po'boy!
