Method

Prepare the Oysters

    Shuck the Oysters

    Carefully shuck the oysters and place them in a bowl, ensuring to reserve any oyster liquor.

    Prepare the Breading

    In a separate bowl, whisk together the egg and milk. In another bowl, combine cornmeal, flour, Old Bay seasoning, salt, and black pepper.

Fry the Oysters

    Heat Oil

    In a deep skillet or fryer, heat oil to 350°F (175°C).

    Breading Process

    Dip each oyster in the egg mixture, then coat in the cornmeal mixture.

    Fry Oysters

    Fry the oysters in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Prepare Rougaroux Dressed

    In a bowl, mix mayonnaise, hot sauce, lemon juice, and chopped parsley until well combined.

Assemble the Po'boy

    Slice the Leidenheimer bread in half lengthwise.

    Spread the Rougaroux dressed over the bottom half of the bread. Layer with shredded lettuce, tomatoes, and fried oysters.

    Top with the other half of the bread, slice in half, and serve immediately.
