Prepare the Shrimp
In a large bowl, combine the peeled and deveined shrimp with the lemon juice, hot sauce (if using), and a pinch of salt. Mix well and set aside to marinate for about 15 minutes.

Make the BBQ Sauce
In a large skillet over medium heat, melt the crustacean butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant. Pour in the Abita beer and bring the mixture to a simmer.

Add Seasonings
Stir in the chopped rosemary and cracked black peppercorns. Let the sauce simmer for about 5 minutes to allow the flavors to meld.

Cook the Shrimp
Add the marinated shrimp to the skillet and cook for about 3-5 minutes, or until the shrimp turn pink and opaque. Stir occasionally to coat the shrimp evenly in the sauce.

Assemble the Po'boys
Slice the French bread or po'boy rolls lengthwise without cutting all the way through. Fill each roll with the BBQ shrimp mixture, and top with shredded lettuce and sliced tomato.
