Prepare the Potatoes
Preheat the oven to 425°F (220°C). Wash and peel the russet potatoes, then cut them into thin fry shapes.

Season the Fries
In a large bowl, toss the cut fries with olive oil, chopped rosemary, salt, and black pepper until evenly coated.

Bake the Fries
Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Add Parmesan
Remove the fries from the oven and sprinkle the grated Parmesan cheese over the hot fries. Return to the oven for an additional 5 minutes to allow the cheese to melt.
