Preparation Steps
Prepare the Baguette
Preheat the oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices and arrange them on a baking sheet. Brush both sides with olive oil.
Toast the Baguette
Bake the baguette slices in the preheated oven for about 5-7 minutes, or until golden and crispy. Remove from oven and let cool slightly.
Cook the Filet Tenderloin
Season the filet tenderloin with salt and black pepper. In a skillet over medium-high heat, sear the filet on all sides until browned. Cook for about 4-5 minutes for medium-rare, or to your desired doneness. Remove from heat and let rest before slicing thinly.
Prepare the Bruschetta Topping
In a bowl, combine diced cherry tomatoes, chopped fresh basil, balsamic vinegar, salt, and black pepper. Mix well to combine.
Assemble the Crostinis
Spread a layer of goat cheese on each toasted baguette slice. Top with a slice of the filet tenderloin and a spoonful of the bruschetta mixture.
Serve
Arrange the crostinis on a platter and serve immediately.
