Directions

  1. 1

    Prepare the Marinade

In a small bowl, whisk together olive oil, lemon juice, chopped dill, minced garlic, salt, and black pepper.

  2. 2

    Marinate the Salmon

Place the Faroe Island salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 20 minutes.

  3. 3

    Roast the Vegetables

Preheat the oven to 400°F (200°C). On a baking sheet, toss the asparagus and cherry tomatoes with a little olive oil, salt, and pepper. Roast in the oven for 15 minutes.

  4. 4

    Cook the Salmon

After marinating, place the salmon fillets on a separate baking sheet lined with parchment paper. Bake in the oven for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.

  5. 5

    Serve

Plate the roasted asparagus and cherry tomatoes, and top with the baked Faroe Island salmon. Garnish with additional dill if desired.
