Preparation and Cooking Steps

    Marinate the Filet

    In a bowl, combine filet mignon with Himalayan pink sea salt and coarse ground black pepper. Allow to marinate for at least 30 minutes.

    Prepare the Rainbow Carrots

    Preheat the oven to 400°F (200°C). Toss rainbow carrots with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20-25 minutes, or until tender.

    Cook the Filet Tips

    Preheat the broiler. Place the marinated filet tips on a broiler pan and broil for about 4-5 minutes on each side, or until desired doneness is achieved. Remove and let rest before slicing.

    Sauté the Vidalia Onions

    In a skillet, heat a tablespoon of olive oil over medium heat. Add sliced Vidalia onions and sauté until they are caramelized and golden brown, about 10 minutes.

    Serve

    Slice the filet tips and serve over a bed of roasted garlic mashed potatoes. Garnish with roasted rainbow carrots, top with sautéed Vidalia onions, and drizzle with house-made Bordelaise sauce.
