Prepare the Burger Patties
In a large mixing bowl, combine the ground chuck, brisket, and short rib. Season with salt and black pepper. Mix until just combined and form into 4 equal-sized patties.
Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Once cooked, remove and drain on paper towels.
Sauté the Onions
In the same skillet, add a tablespoon of olive oil and sauté the Vidalia onions until they are golden and caramelized, about 5-7 minutes. Remove from heat.
Grill the Burger Patties
Preheat a grill or grill pan to medium-high heat. Grill the burger patties for about 4-5 minutes on each side, or until they reach your desired doneness.
Melt the Cheese
In the last minute of cooking, place a slice of smoked Gouda cheese on each patty and close the lid to melt the cheese.
