    Prepare the Guajillo Coulis

    Start by removing the stems and seeds from the guajillo peppers. Soak the peppers in hot water for about 15 minutes until softened. Drain and blend the peppers with olive oil, salt, lime juice, and a bit of water until smooth. Set aside.

    Cook the Wagyu Flank Steak

    Season the Wagyu flank steak with salt and black pepper on both sides. Heat a skillet or grill over high heat and add a tablespoon of olive oil. Cook the steak for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from heat and let it rest for 5 minutes.

    Prepare the Mango and Endive

    While the steak rests, peel and dice the mango into small cubes. Slice the red endive into thin strips.

    Assemble the Dish

    Slice the rested flank steak against the grain. On a plate, drizzle the guajillo coulis, place the sliced steak on top, and garnish with diced mango and red endive.
