Prepare the Potatoes

Wash and peel the potatoes, then cut them into small cubes or 'quoins'.

Fry the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove and let it drain on paper towels.

Cook the Potatoes

In the same skillet, add olive oil and the potato cubes. Season with salt and pepper, and cook until golden and crispy, about 10-15 minutes. Set aside.

Form the Burgers

Divide the ground beef into two equal portions and form into patties, about 4 oz each.

Cook the Burgers

In the same skillet, cook the burger patties over medium-high heat for 4-5 minutes on each side for medium rare, adding a slice of taleggio cheese on top during the last minute to melt.

Assemble the Burger

On the bottom half of each bun, place a lettuce leaf, followed by the burger patty, crispy bacon, and a slice of tomato. Top with ketchup and mustard, then close the burger with the top half of the bun.

Serve

Serve the burgers hot with the crispy potato quoins on the side.
