Prepare the Dough

In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy. In a large mixing bowl, combine the flour and salt. Make a well in the center, add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Toppings

While the dough is rising, prepare the caramelized onions if not already done. Cook sliced onions in olive oil over low heat for about 20-30 minutes until golden and sweet, stirring occasionally.

Assemble the Pizza

Preheat the oven to 475°F (245°C). Once the dough has risen, punch it down and roll it out on a floured surface to your desired shape. Transfer to a pizza stone or baking sheet. Spread caramelized onions over the dough, then layer with sliced figs and crumbled gorgonzola cheese. Sprinkle with chopped rosemary.

Bake the Pizza

Bake in the preheated oven for about 12-15 minutes or until the crust is golden and the cheese is bubbly. Remove from the oven and let cool slightly before slicing.
