Fried Green Tomato Sandwich Directions

    Prepare the Tomatoes

    Slice the green tomatoes into 1/4 inch thick slices. Season both sides with salt and pepper. Set aside.

    Set Up Your Breading Station

    In one shallow dish, place the all-purpose flour. In a second dish, beat the eggs. In a third dish, place the cornmeal.

    Bread the Tomatoes

    Dredge each tomato slice in flour, dip in beaten eggs, and then coat with cornmeal, pressing lightly to adhere.

    Fry the Tomatoes

    In a large skillet or frying pan, heat oil over medium-high heat. Once hot, carefully add the breaded tomato slices, frying for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

    Cook the Bacon

    In the same pan, cook the bacon slices until crispy. Remove and drain on paper towels.

    Assemble the Sandwich

    On a piece of piadina, spread a generous layer of basil pesto. Add a layer of fried green tomatoes and top with crispy bacon. Place another piece of piadina on top to form a sandwich.
