Grilling Swordfish

    Prepare the Swordfish

    Brush the swordfish steaks with olive oil and season with salt, black pepper, and lemon juice. Let marinate for about 15 minutes.

    Grill the Swordfish

    Preheat the grill to medium-high heat. Grill the swordfish for about 4-5 minutes per side, or until the fish flakes easily with a fork.

Making Longhot Hollandaise

    Prepare the Hollandaise

    In a bowl, whisk the egg yolks with lemon juice and a pinch of salt. Place the bowl over a pot of simmering water (double boiler). Gradually whisk in melted butter until the sauce is thick and creamy. Stir in the chopped longhot peppers.

Roasting Cauliflower

    Prepare the Cauliflower

    Preheat the oven to 425°F (220°C). In a bowl, toss the cauliflower florets with olive oil, garlic powder, salt, and black pepper.

    Roast the Cauliflower

    Spread the cauliflower on a baking sheet and roast for about 25-30 minutes, or until golden brown and tender, stirring halfway through.
