    Prepare the Croutons

    Preheat your oven to 375°F (190°C). Cut the sourdough bread into small cubes and toss them with 2 tablespoons of olive oil, salt, and pepper. Spread the cubes on a baking sheet in a single layer and bake for 10-15 minutes or until golden and crispy.

    Make the Dressing

    In a small bowl, combine the minced garlic, lemon juice, Worcestershire sauce, anchovy fillets, and the remaining tablespoon of olive oil. Whisk until smooth and season with salt and black pepper to taste.

    Grill the Lettuce

    Preheat a grill or grill pan over medium-high heat. Cut the Gem lettuce heads in half lengthwise and brush the cut sides with a little olive oil. Grill the lettuce cut-side down for about 2-3 minutes until slightly charred and wilted.

    Assemble the Salad

    Place the grilled lettuce on plates, drizzle the dressing over the top, and sprinkle with grated Parmesan cheese and the croutons. Serve immediately.
