    Prepare the Sourdough Croutons

    Preheat your oven to 375°F (190°C). Cut the sourdough bread into small cubes. Toss them in a bowl with olive oil, salt, and pepper until evenly coated. Spread the bread cubes on a baking sheet in a single layer and bake for about 15 minutes, or until golden brown and crispy. Remove and let cool.

    Grill the Gem Lettuce

    Cut the Gem lettuce heads in half lengthwise. Brush the cut sides lightly with olive oil and season with salt and pepper. Preheat a grill or grill pan over medium heat. Place the lettuce cut-side down on the grill and cook for 2-3 minutes, until grill marks appear and the lettuce begins to wilt.

    Assemble the Salad

    Once the lettuce is grilled, remove it from the grill. Place the grilled lettuce halves on a serving platter. Drizzle with Caesar dressing, sprinkle with Parmesan cheese, and top with the homemade sourdough croutons.
