    Caramelize the Onions

    Slice the onion thinly. Heat olive oil in a skillet over medium heat. Add the onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Season with salt and pepper.

    Prepare the Figs

    While the onions are caramelizing, slice the fresh figs in half.

    Assemble the Piadina

    Lay one piece of piadina flat. Spread half of the caramelized onions over it. Crumble half of the gorgonzola cheese on top of the onions, followed by half of the fresh figs. Drizzle with balsamic vinegar and some black pepper.

    Cook the Piadina

    Top with the second piece of piadina and press down gently. Heat a clean skillet over medium heat and cook the piadina for about 3-4 minutes on each side, or until the bread is crispy and the cheese is melted.

    Serve

    Remove from skillet, slice, and serve warm, topped with fresh arugula.
