Crispy Octopus

Preparation

    Prepare the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and cook for 40-45 minutes until tender. Remove from water and let cool.

    Marinate the Octopus

    Once cooled, chop the octopus into bite-sized pieces. In a bowl, mix olive oil, minced garlic, paprika, lemon juice, salt, and black pepper. Add octopus pieces to the bowl and let marinate for at least 30 minutes.

    Cook the Chickpeas

    In a separate pan, heat some olive oil over medium heat. Add cooked chickpeas and sauté until they are slightly crispy, about 5-7 minutes. Season with salt and pepper.

    Fry the Octopus

    Heat additional olive oil in a frying pan over high heat. Add the marinated octopus pieces and fry until golden brown and crispy, about 4-5 minutes.

    Prepare the Celery Salad

    In a small bowl, combine finely chopped celery, lemon zest, and a drizzle of olive oil. Season with salt and pepper to taste.

    Serve

    On a platter, arrange crispy octopus on one side, sautéed chickpeas on the other, and the celery salad in the center. Garnish with fresh parsley and serve immediately.
